Martha Stewart’s Pumpkin Mousse
I threw this together when I got home around 11:30 night and had one of those, “Oh crap, I need to bake something for my work’s Thanksgiving potluck tomorrow!” moments. Not wanting to get into the process of preheating ovens, softening butter, letting things cool, etc., I decided to whip together this mousse in about 15 minutes.
I forgot to take a photo so I’m just posting this one I found online…it looked just like this 🙂

Gingerbread Cake
I can’t remember what recipe I used for this, but I wanted to share a photo of this cake made in my Nordic Ware Pumpkin Loaf Pan. I brought this to a Thanksgiving dinner, but we ended up eating it for breakfast the next morning!

Pink Lemonade Cake with Swiss Meringue Buttercream and Cream Cheese Filling, decorated with a Ruffle Design
How gorgeous is this cake?? And I have a secret…it was super simple to decorate. It took me a few minutes of playing with the pastry bag to figure out how to make the ruffles, but once I got the hang of it, the whole cake was covered in ruffles in only 10 minutes.
The cake layers were just ok, but the cake came together beautifully when the layers were covered in a pink lemonade simple syrup, sandwiched together with cream cheese filling, and coated with the meringue buttercream (with some lemon zest mixed in.)
