Mocha Shortbread

Martha Stewart’s Mocha Shortbread

Because I had my favorite sous chef helping me and I was concentrating on making sure he didn’t lose a finger in the mixer, I forgot to add the coffee powder to this recipe, so these technically came out as chocolate shortbread. We made these as a present for my chocoholic grandmother-in-law, though, so I’m sure all will be forgiven.

These were way salty in my opinion, so I’d cut the salt back to a 1/2 teaspoon if you try to make these. They are super-easy, and with just a few ingredients, come together in a matter of minutes.

The recipe calls for a round pan, but since I have a shortbread pan I thought I’d use it.  See how pretty it is?

(Sorry the pic is upside down.)  Since the cookies are dusted with sugar, you can’t see the pretty designs, but they are still pretty just the same!
