I stirred in some chocolate chips to the batter and added a little cocoa powder to the banana buttercream because, well, chocolate.

Cranberry and Apple Cake

Ina Garten’s Cranberry and Apple Cake

I forgot to take a photo of this cake, but it looked just like Ina’s here.  With a saucy mix of apples and cranberries on the bottom, covered by a cakey topping with a crunchy cinnamon crust, this turned out almost cobbler-like.

Frosted Pineapple Squares

Frosted Pineapple Squares

My mother asked me to make this dessert for her birthday “cake” last month, as it was a childhood favorite of hers my grandmother used to make.  My grandmother passed away earlier this year, but we resurrected the original recipe from her recipe box; my mother said the bars tasted like she had always remembered.

Coincidentally, today would have been my grandmother’s 87th birthday.  This is the first year I will not be making her a birthday cake since I started baking some ten-plus years ago.  I bake hundreds of things throughout the year, but that was one of my favorite annual baking traditions, as I gave her a break from the kitchen and cooking for others, and made something special for her to enjoy.  I hope I will continue to discover these recipes that she made well before my time so I can replicate these gifts she made for others.

Apple-Cherry Pie

Apple-Cherry Pie

In a fit of wanting to use up straggling pantry items, I made the laziest pie ever: a pre-made graham cracker crust, filled with a mixture of one can each of apple and cherry pie filling:

No time to make a whole pie?  Yeah, who does?  But you can approximate its fall flavors with these single-serve apple “pies” that you can bake right in a mug in your microwave:

You can even fancify it by removing your pie from the mug and topping it with ice cream:
