Bird’s Nest Cookies

Martha Stewart’s Bird’s Nest Cookies

I meant to post this when I made these at Easter time, but life got in the way…

Here we have crumbly, buttery chocolate cookies, spread with whipped ganache:

And topped with coconut and jelly beans to create these springtime treats:

German Chocolate Protein Bars

German Chocolate Protein Bars from The Sweet Life

Another experiment in protein bar making.  These are no-bake and can be made in a food processor…you really have no excuse not to make your own anymore.

The secret to the rich coconut flavor in these cupcakes and their frosting?  Condensed coconut milk.

Chocolate Coconut Granola

Chocolate Coconut Granola

I based this off my go-to granola recipe, which basically calls for:

  • 3 c. rolled oats
  • 3 c. “other stuff”
  • 1/4 c. oil
  • 2 T. sticky sweetener
  • 1 T. spices
  • 1 tsp. extract

For this version, I used almonds and flaked coconut as the “other stuff”, agave as the sweetener, cocoa powder as the spice, and Tahitian vanilla (with tropical notes) as the extract.

Coconutty Blondies

Guy Fieri’s Coconutty Blondies, from Food Network

Blondies are my all-time favorite dessert.  Give me a pan of those soft, chewy, chocolate-studded babies, and there will be a scene you will not want to witness.

I made this version (dubbed “Blondies with Dark Roots” by Mr. Fieri…how clever) that also has coconut and nuts (the recipe calls for hazelnuts, but I used walnuts) stirred in.

Coconut-Mango Macaroons

Coconut-Mango Macaroons, adapted from Martha Stewart

I substituted chopped dried mango slices for the dried apricots in this recipe. Any dried fruit should work, but I think another tropical fruit like pineapple or guava would meld best with the coconut.

Blackberry Strudel Cookies

Blackberry Strudel Cookies, from Better Homes and Gardens

I finished up this season’s blackberry haul with these roulade cookies, featuring a fresh blackberry, dried blueberry, coconut, and walnut filling, rolled up into a sweet pastry dough.
