I based this off my go-to granola recipe, which basically calls for:

  • 3 c. rolled oats
  • 3 c. “other stuff”
  • 1/4 c. oil
  • 2 T. sticky sweetener
  • 1 T. spices
  • 1 tsp. extract

For this version, I used almonds and flaked coconut as the “other stuff”, agave as the sweetener, cocoa powder as the spice, and Tahitian vanilla (with tropical notes) as the extract.

Coconutty Blondies

Blondies are my all-time favorite dessert.  Give me a pan of those soft, chewy, chocolate-studded babies, and there will be a scene you will not want to witness.

I made this version (dubbed “Blondies with Dark Roots” by Mr. Fieri…how clever) that also has coconut and nuts (the recipe calls for hazelnuts, but I used walnuts) stirred in.

I substituted chopped dried mango slices for the dried apricots in this recipe. Any dried fruit should work, but I think another tropical fruit like pineapple or guava would meld best with the coconut.


Blackberry Strudel Cookies

I finished up this season’s blackberry haul with these roulade cookies, featuring a fresh blackberry, dried blueberry, coconut, and walnut filling, rolled up into a sweet pastry dough.
