I used white flour and substituted about a cup of chocolate chips for the nuts in this recipe, because…isn’t this already healthy enough with the bananas and pumpkin in it? (And yes, this definitely tastes more like a snack cake than a bread.)

Yes, there really is a book that gives you over a hundred ideas of things you can make with popcorn (besides popcorn, of course.)  It doesn’t include my awesome Movie Munchie Ice Cream–but it does have a few fun recipes, like these bars that elevate your standard popcorn balls and serves them in bar form.  This cookbook came in handy when I was received one of those 8-gallon tins of popcorn!

Chocolate Chunk Cookie Cupcakes

Is it a cookie?  Is it a cupcake?  It’s both: a cupcake-shaped treat with the chewiness and density of a chocolate chunk cookie.  I added a simple chocolate glaze to the top, made with two kinds of chocolate, butter, and corn syrup.
