This recipe was next in my quest for the ultimate brownie recipe.  Fudgy and rich, yet quick and simple to make….is it possible I hit the jackpot with my second attempt?  I have at least one more I want to try, but I may be declaring these the winner.

There’s a cute story behind the name of these famed brownies, but I just wanted to try them because I am on the quest for the ultimate go-to brownie recipe.  This was not it, but they are pretty darn good.  Stay tuned for better contenders.

Black Bean Brownies


Black Bean Brownies

Brownies with…beans??  Yes, believe it. And they are DELICIOUS.  Black beans make these a gluten-free and protein- and fiber-packed dessert or snack  you can feel good about, with zero “beany” flavor.  Oh, and you can make them a in a blender, so they are super easy.

2 cups black beans (rinsed if canned)
3 eggs
1/3 cup cocoa powder
1/3 cup oil, coconut, grapeseed, or canola oil
1/2 cup honey or agave nectar
1/2 tsp. baking soda
1/2 tsp. sea salt
1/2 cup chocolate chips or chopped nuts (optional)

Preheat oven to 350. Oil an 8×8 pan. Place all ingredients except chocolate chips in a  food processor or blender. Blend till well mixed. Stir in chocolate chips. Spread into pan and bake for 30 minutes.

Brownie Balls

I couldn’t let the leftover brownies from making Brownie Pillow Cookies go to waste.  Expecting company, I used the remaining 1/2-pan of brownies to make a treat with a twist on traditional rum balls.  I broke up the brownies and added a few splashes of pumpkin cream liqueur.  I then mixed those together to a shape-able consistency, formed balls, and rolled them in sanding sugar.

Don’t you just hate when you want a brownie AND a cookie at the same time?  So few desserts, so little time… Well, what if you stuffed a brownie INSIDE a chocolate chip cookie?  Is your mind blown yet?  Yeah, I thought it might be.

These cookies are ENORMOUS when baked.  The unbaked cookies are the size of baseballs…because tucked inside each innocent-looking wad of cookie dough is a brownie square:
