Miami Beach Sour Cream Cake

Miami Beach Sour Cream Cake, adapted from Maida Heatter’s Cakes, as  published in The Washington Post

I don’t know why this cake claims to hail from Miami Beach, so don’t even ask.  But I do know the almond and lemon flavors mingle beautifully against the backdrop of a rich sour cream base.  In addition to folding in whipped egg whites, you will need to sift the flour four (!!) times to achieve this cake’s light crumb.
