Eggnog Fudge

I figured I should do something with the half-carton of soy eggnog shuffling around my fridge before Valentine’s Day rolled around.  This fudge seems fail-proof, despite not needing a candy thermometer to gauge the temperature of the fudge–a typically persnickety confection. Just follow the visual cues in the recipe, and you’ll be fine.  And stir, stir, stir.

Most people think of fudge as being chocolate, but did you know fudge is really defined as a mixture of only sugar, butter and milk, boiled to the soft ball stage and beaten til cool?  Chocolate fudge is only one of many possible variations.

This fudge has a nice nutmeggy flavor and creamy texture.  I was not sure if the soy nog would work in this recipe, but it did!
