White-Wheat Bread, from Sur la Table’s The Art and Soul of Baking

I followed SlT’s white bread recipe, substituting King Arthur White Whole Wheat flour for the all-purpose white flour.  It looks pretty and it tastes good toasted, but I’m still looking for a go-to knockout white-wheat loaf…
