Mini Pumpkin Pies

Mini Pumpkin Pies, adapted from Whole Foods Market’s Dairy-Free Pumpkin Pie

I guess it’s not really pie if it has no crust and is made from mostly good-for-you ingredients…but this tastes just like pumpkin pie!  Based on silken tofu and pumpkin puree, this is a nutritious snack that will fulfill your fall comfort food needs.

I made just the filling from this recipe and baked it in brûlée dishes to make individual servings.  If you do not have pumpkin pie spice on hand, you can always substitute a 4:2:1:1 mixture of cinnamon:ginger:nutmeg:allspice.
