Apple Cider Cupcakes with Cider Cream Cheese Frosting, from Gourmet magazine

Buying a gallon af apple cider for a two-person household seemed like a good idea a month ago…but it turns out there’s no way we could drink the whole thing.  I had this recipe for apple cider cupcakes I’ve been wanting to try, so this seemed like a good opportunity to do so.  Both the cupcakes and the cream cheese frosting have boiled apple cider in them.  By boiling apple cider, it reduces to a thick, sweet-tart syrup that can be used just like maple syrup.  For more ideas on what you can do with this stuff, check out this Washington Post story about uses for boiled apple cider.  I finished these cupcakes with dried apple slices and a dusting of cinnamon.
