Jack O’ Lantern Cake Pops, inspired by Bakerella’s Cake Pops

When you make eight-layer cakes, you can end up with a fair amount of scraps and leftover frosting after you carve and assemble the cake.  After making a pumpkin layer cake with maple buttercream, I had a pile of cake pieces and a mound of frosting remaining.  It would have made me sad to throw them away.

Fortunately there is a delightful little trend called “cake pops”.  Cake pops exploded into popularity in the last 2 years, but I was making them well before they became the new cupcake.  I actually think I invented them.  I just wanted to throw that out there.  I’m not bitter.

Cake pops are a blend of crumbled cake and frosting that you blend together to create a bite-sized silky ball of cakey goodness.  You put this deliciousness on top of a lollipop stick and hold it together with candy coating.  If you are so inclined, there are limitless options for decorating them as adorable little characters, like these  jack o’ lanterns!
