Whoopie Pies

Whoopie Pies, adapted from The Washington Post

My fridge was providing shelter to several different frostings I’ve made in the past few days: Mascarpone Frosting, White-Chocolate Mousse, and Strawberry Buttercream.  All three of these go well with chocolate, so I figured a batch of whoopie pies was in order.

I made only the cookies from the Post’s recipe since I already had enough filling on hand to stuff a 30 pound turkey.  The filling in this recipe looks like it would be fantastic sandwiched in between other whoopie pie cookies too, such as gingerbread, pumpkin or banana.
