Chocolate Red-Wine Cupcakes with Mascarpone Frosting, adapted from a Rachael Ray recipe

Why drink wine while you nibble on chocolate when you can mix them in a bowl and make cupcakes instead?  These adult cupcakes include my favorite edible vices: chocolate, wine, liquor, coffee and cheese.  The FDA really should rethink their food pyramid to be based on these groups.

These cupcakes have just enough wine in them for you wonder, “What is that flavor?” without being too overpowering.  I used a Chambourcin from Fenwick Wine Cellars (a delightful little place outside Ocean City that is liberal with their pours if you stop in for a tasting), since it is a wine I enjoy with dessert.

I added a few tablespoons of rum to the frosting and dusted the tops of the frosted cupcakes with finely ground espresso beans. The combination is a bit reminiscent of tiramisu.
