Nectarine Cupcakes with White Chocolate Buttercream, adapted from recipes by Martha Stewart and Bon Appétit

These are a scaled-down version of the nectarine and white chocolate layer cake I recently made.  With leftover buttercream and nectarines on hand, these were a  snap and a natural choice to make.

The cupcake batter produces a light, moist white cake that nestles in a bite of juicy nectarines.  You only need a dab of the sweet white chocolate buttercream to complete this dessert.

You make the cupcakes by lining the bottom of cupcake liners with a bit of the batter, topping with a spoonful of chopped nectarines, then covering the nectarines with a bit more batter:

The finished cupcakes–you’d never know there is a surprise inside!
