Peach-Ginger Pie with Almond Crumble Topping, adapted from Sur la Table’s The Art and Soul of Baking, with Rose Levy Beranbaum’s Flaky Cream Cheese Pie Crust, as published in The Washington Post

I made this pie a good six weeks ago after a peach-picking trip and stuck it in the freezer.  I baked it up this weekend and it was as good as the day I had picked the peaches!  I liked this pie because the almonds and ginger gave it an unusual twist without being too overpowering, and I’m a sucker for anything with streusel on it.
