Apple Muffins

Apple Muffins, as published in Family Circle magazine

I really like how this recipe calls for half whole-wheat and half white flour, natural applesauce, and just a little bit of butter.  These came out very moist, and are a treat I can feel good about feeding to kids!  I sent these for snacktime to my son’s school–where they are starting lessons about apples.

I also like the variations the recipe suggests, such as adding grated zucchini, substituting maple syrup for some of the sugar, or adding wheat germ and walnuts.
