Martha Stewart’s Cashew Butter Cookies

You’ve had peanut butter cookies before, right?  Did you know you can make cookies out of other nut butters, too?  They will take on a slightly different flavor, depending on the nuts you use, but almonds, cashews, macadamias and  walnuts all make fine cookies.

This recipe calls for you to make your own cashew butter (just cashews pureed with a little bit of oil), which is a breeze if you have a food processor.  You can also purchase cashew butter at a number of grocery stores; I’ve seen it at Trader Joe’s and My Organic Market before.  Either way, you may want to make or keep extra on hand for making sandwiches or spreading on apple slices–YUM!

The baked cookies–I baked them a little on the short side because I prefer a softer cookie; adding a couple of minutes to the baking time will result in a crisper cookie, f you prefer:
