Martha Stewart’s Lemon Meringue Bars

These are a handheld version of lemon meringue pie, with a flaky crust, creamy filling, and light topping.

You start by making and baking the crust, a buttery dough flecked with lemon zest that gives these bars a double-lemon punch:


You then whisk together a simple lemon filling which you pour right on top of the crust and bake in the oven–no stove-top cooking required!


You then top the cooled bars with a simple meringue and pop it back in the oven for a few minutes to set and brown:
