Rock Star Brownies

Warning: this is not a fancy recipe, or the ultimate brownie, as the name may suggest.  I made these for my son’s class for “Rock Star Day” day at his school.  I wanted to make something star-shaped, and all kids like brownies, so this fit the bill.  Plus I had a (gasp!) box of Ghirardelli Double Chocolate Brownie Mix in my pantry that has followed me through two different houses, so I figured this would be a good opportunity to use it up.

I made the brownies substituting yogurt for most of the oil so I didn’t feel quite so bad about pumping the kids full of brownies right before naptime.  I drizzled the tops with melted caramel to complete the look.

Using the scraps leftover after cutting out the stars, I created Brownie Truffles, and saved the edges to use as a future ice cream mix-in.
