My son’s class is having a luau today, so I wanted to send in a Hawaiian-themed treat for the kids to share.  My first thought was to make pineapple or mango macaroons (adapted from Martha Stewart’s Coconut-Apricot Macaroons), but I didn’t have any dried pineapple or mango on hand.  So I figured any coconutty cookie would be good enough (especially one with chocolate in it.)

I made these in mini-muffin tins to be better suited for little kids.  I also drizzled white chocolate over the tops instead of topping with almonds, since nuts are a no-no in schools nowadays.  If you bake these in miniature like I did, cut the cooking time back to 15-18 minutes.
