Honeycomb Brittle

Martha Stewart’s Honeycomb Brittle

This is super-easy, folks–it’s basically three ingredients!  Sugar and honey are heated with water to create a hard candy base, then baking soda is whisked in at the end of cooking to make the mixture bubble up and create pockets of air in the candy.  It tastes distinctly of honey, so use a good one!

The candy mixture right after the baking soda has been added and it has been poured on a baking sheet to cool:
