Meringue Flowers

Meringue Flowers, adapted from Martha Stewart’s Lemon Meringue Flowers.

I made these for my son’s pre-school class, as they are learning about flowers and planting a garden at the moment.  I adapted Martha’s recipe by placing a white chocolate chip in the center of each flower instead of the candied lemon.  I think a number of things would work as the flower stigmas (centers), such as M&Ms, jelly beans or Skittles.  I also omitted the lemon zest and extract from the recipe (but I added about a 1/2 tsp. of vanilla extract instead.)

BONUS:  Each flower is only about 10-15 calories, if you care about that stuff.

To pipe the flowers, you create five circles to create the petals, and drag the tip of your pastry bag into toward the center of the flower each time:
