Carrot Cheesecake

Carrot Cheesecake, as published in Better Homes & Gardens

This is two cakes in one.  I made this for my mother’s birthday because two of her favorites are carrot cake and cheesecake.  You prepare a carrot cake batter and pour it in a springform pan, then prepare a cheesecake batter and pour it over the carrot cake batter.  As it bakes, the cheesecake batter sinks in the middle, making a carrot cake shell with a cheesecake center.  So when you have a piece of this cake, you’re really eating two pieces of cake at once.  Really sinful stuff.  (I made the carrot cake batter from scratch instead of using a boxed mix as the recipe specifies – I figure it you’re going to eat dessert, it should be worth it.)

    This looks absolutely amazing…..not to mention delicious!!! Am defniely going to try it. I always bake cakes from scratch, too. They are so much better, in spite of the extra work.
